A “Kaspressknedl” dumpling
Or perhaps even two? Tyrolean mountain cheese tastes great on its own. Or as part of a delicious Knödel dumpling dish.
Every afternoon, you can enjoy our indulgent buffet with local delicacies here at Arpuria. So that you can enjoy a little Tyrolean cuisine at home, too, today we’re giving you the recipe for a Tyrolean classic: Kaspressknödel dumplings.
Sauté a small, finely diced onion in a little butter until it turns glassy. Mix 300g of cubed dried bread with 150g of grated mountain cheese (if it’s from Tyrol, even better), and add the onion. Beat 4 eggs with 100ml of milk, then pour the mixture over the bread and cheese, season with salt and pepper, and combine well. Fold in a little chopped parsley and leave the dough to rest for a while. Afterwards, shape the dough into dumplings and press them flat. Fry the Tyrolean delicacies in a pan until they turn golden brown and then serve them either in a soup or with salad. Deliciously simple – and simply delicious!
